Kind of felt like I was forced to be in someone’s social experiment. Came here with Gracie and we got the pre fixie.
Negi Toro – 4/5

Decent – little Burst of flavor – very tiny
Tomato kimchi / salted duck egg/ aioli (it is the tiny sunflower looking thing)
Pan de sal – 3.3/5

Decent foie gras imitation, I prefer pate. The bread is lk not that great
Foie Mousse, Fresh water Eel, Bottarga
Scallop – 4.5/5

Scallop had some nice texture to it with a slight bit of a bite – the granita was nice gave some crunch and the “spicy” sauce on the side was sweet / mixed with the salty/umami was a nice treat one of the highlights of the meal.
Chervil Granita , strawberries , melon
Stuffed Chicken Wing – 4.5/5

One of the best “chicken wings”. I guess one of the best chicken wing skins I’ve had the filling was pretty underwhelming it was like a mock up of a spring roll but didn’t really hit that mark tbh. The microgreens was a decent addition kind of culled the fatty mess. The aioli was nothing special but that chicken wing was nice.
Crab Farci – 3.5/5

This is minced crab in lettuce in a very forgettable sauce. With that being wrong hard to go wrong when you put crab in front of me.
Americaine, savoy cabbage, culantro
Wagyu Short Rib – 4/5

Pretty good mashed potato or POMME PURÉE. The wagyu short rib was p nice but again I don’t think the wagyu is worth it here. Sometimes you ball out for it and sometimes you don’t. Here do not.
POMME Purée, Sinamak Jus
Branzino – 3/5

It’s like a standard branzino.
Pork collar – 3.5/5

It’s comparable to the Wagyu. I don’t know if thats good or bad.
Filet o Fish – 3.5/5

Definitely needs more tartar sauce – fish was dry. Focaccia was decent I guess. Would lowkey prefer the filet o fish at McDonald’s but I live and die by that dish.
Olive Oil Cake – 3.2/5

Ice cream pretty good. The Olive cake not so much.
Peach Ice Cream – 5/5

One of the best sorbets I’ve ever had. Even down to the crystallization.
Price – 1/5
I am very generous when it comes to pricing of things if you already couldn’t tell and this was definitely not worth it. À la Carte has some options that I saw were decent but overall definitely paying for the experimental portion of things I guess but even then was not amazed or loved the dishes really.
Food – 3.5/5
Decent wasn’t like it was bad but definitely wouldnt tell people to come here.
Experience – 3/5
I enjoyed the theatrics and the storytelling a lot. I like knowing the background of the dishes but there was a lot more of doing than showing if you know you know
